Sanford welcomes new cafeteria staff

Chef Mike Galvin started with Culinart in 2011 at Padua. Sanford needed a new Chef and Galvin was able to transfer to Sanford half way through the year.

“My number one goal is to make lunch everyone’s favorite period of the day,” said Chef Mike.

Chef Mike makes all the menus, seeing what is available seasonally and also tries new items using the internet sometimes. Galvin also likes to take suggestions from students asking them what they want on the menu and what they haven’t seen.

“I’m always up for trying something different,” said Chef Mike.

The cafeteria uses two local vendors which go to local farms and gets the fresh produce from farms. Most local farms are in Delaware, Pennsylvania, and New Jersey.

“Every Monday I need chicken tenders on the menu,” said Chef Mike. “If I didn’t I think I would get beat up.”

Some of the most popular food are breakfast for lunch, mashed potatoes, and some entrees with some type of roasted meat.

“Our baked apples and mashed potatoes are two popular items also,” said Chef Mike.

Galvin started his food career in high school.

“In high school I took Home Economics and I really enjoyed that,” said Chef Mike.

Chef Mike took classes for cooking like Home Economics and eventually went to a vocational school in 10th and 11th grade.

“Half [the work] I would do normal school work, and the other half in the kitchen,”said Chef Mike. “I started working in restaurants when I got my license to drive.”

Chef Mike hopes to own a restaurant but has other ideas on his goals for the future.

“I wanna open up a restaurant, however my goal is to stay here as long as possible,” said Galvin. “ This is kinda like owning your own restaurant except you don’t have to worry about you overhead and where your clients are coming from”

Galvin loves different seasons and holidays. He likes to prepare holiday meals for his family.

“I think Thanksgiving is my favorite holiday you don’t have to worry about buying presents, you just have to eat,” said Galvin.

There are some new staff here at the cafeteria Debbie is usually helping out with the entrees .

“I have been in the food service business longer than probably than Chef Mike has,” said Martin.

You may see Cathy Sforza and Chrissy McCloskey working at the cash register. Chrissy is new this she is Chef Mike’s sister. You probably see Cheryl Revell serving entrees to you at lunch. You probably see Monica Lentelle making entrees.
